- 3 medium-large sized beets
- 4 oz goat cheese
- 1 clove garlic
- 1 pinch cayenne pepper
- Olive oil
- pistachios toasted and chopped
- fresh mint leaves for garnish
Cook pasta.
Blend cooked beets, goat cheese, olive oil and garlic with pasta water until smooth.
Garnish with pistachios and mint leaves.
